Meal #2 of the crock pot challenge was a success! I honestly typed ‘crock pot’ into the search bar on Pinterest and made the first recipe that I saw. Yes, I was that lazy.
Conveniently, Jenny had just made her version of chicken tortilla soup the day before, so I was super pumped to come home to the soup that she loved. Sidenote: I love all soups. Especially when it’s cold outside.
P.S. it snowed in Virginia this week. Not cool. No pun intended.
Needless to say, coming home to a kitchen full of yummy smells was much needed. I mixed most of the ingredients in a ziplock bag a few days before making this recipe and popped it in the freezer. The night before we wanted to have soup for dinner, I dumped the bag into the crock pot, added the remaining ingredients, and let it all hang out together in the fridge overnight to save time the next morning.
When I woke up, I set the whole pot on the counter to warm up a bit before turning up the heat. Am I the only person who worries about the crock pot cracking, shattering, and burning the house down while I’m at work? Please say no, but also tell me that I’m being irrational.
I was lucky that Blair made it home before I did. And being the super sweet man that he is, he shredded the chicken for me! So once we were settled, all we needed to do was shred some cheese and open a bag of tortilla chips. And dinner was deliciously served. 🙂
Crock Pot Chicken Tortilla Soup
Serves 6-8. Adapted from Your Homebased Mom.
– 4 boneless, skinless chicken thighs
– 1-12 ounce can diced tomatoes
– 1-10 ounce can mild enchilada sauce
– 1 small can green chiles, chopped
– 1 can yellow corn
– 1 can black beans, rinsed and drained
– 1/2 onion, chopped
– 3 cloves garlic, minced
– 2 chicken bouillon cubes
– 1 teaspoon cumin
– 1 teaspoon chile powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– juice from 1 lime
– 4 cups water
Combine all ingredients in crock pot. Cover and cook on low for 6-8 hours. Remove chicken when cooked through, shred with fork and knife, add back to crock pot. Serve with tortilla chips, sour cream, and freshly grated cheddar cheese. Enjoy!
